Made it Monday | NY Giants WinSuper Bowl After Party Chilaquiles
Well, you made through Monday. The toughest day of the week, especially when compounded by Super Bowl Sunday festivities the night before. I’m sure after a morning of Alka-Seltzer shakes and back-to-back meetings, the last thing you want to do is worry about dinner. So I present to you, the Chilaquiles. It’s a tasty, fast and easy dish you can make using those leftover chips, salsa, and guacamole. Olé!
Ingredients:2 Tbsp Oil2-3 Garlic Cloves2-3 Cups leftover tortilla chips (day-old the better)10 oz jar of Salsa (any kind, but the more salsa the better)1 cup CheeseOptionals: Eggs, Avocado, or Cooked Chicken
Heat a skillet under Medium flame. When skillet is hot enough add the oil and garlic. Cook the garlic for flavor, don’t burn. You can remove garlic from oil or leave it in, your preference. Add the tortilla chips and stir them around to coat with the heated oil. Make sure you get them nice and toasty. Once the tortilla chips are slightly brown, add the salsa. Gently incorporate the salsa with all the chips, getting them covered and softened. Turn heat down to Medium/Low and let warm through to a simmer. Once at a simmer, turn heat to low, and cover with cheese until melty.
The beauty of this dish, is that it works best with leftovers. You can add shredded cooked chicken, a poached or fried egg on top, less cheese, more cheese, sour cream, avocado, green salsa, you name it. I like to heat the oven to 450 degrees, put the cooked ingredients from skillet into a greased casserole dish, add cheese then bake until cheese melts. Top it all with avocado slices, cilantro, sour cream and a poached egg. You can’t go wrong and you will have something totally tasty and satisfying to put your Monday to bed.
